The Brasserie’s name makes reference to the moment in Scottish
history when Sir Walter Scott uncovered the Scottish Crown Jewels,
or The Honours of Scotland. It also owes a debt to the 18th century
book on etiquette, ‘The Honours of the Table’
by Rev. Dr. John Trusler, who exclaimed to do the honours of a
table gracefully, is one of the outlines of a well-bred man.
